Manchester's only Michelin star restaurant becomes burger takeaway for lockdown

Manchester's only Michelin star restaurant is about to launch a takeaway service - but it's a long way from the menu you might expect.

In one of the most unexpected pivots of the last 12 months, Mana will be selling burgers from its Ancoats restaurant.

The cheeseburgers, which will be available to pre-order and collect from the Blossom Street venue, features a cheese made from Cloudwater beer and beef sourced from the Lake District.

Mana plans to add tacos to its takeaway menu next, and is considering a foray into fried chicken too.

Under the steer of its chef patron Simon Martin, the restaurant scooped a Michelin star in 2019, the first in the city to do so for more than 40 years.

Its usual menu champions the finest ingredients available sourced or foraged as locally as possible.

Dishes on its most recent sample menu include celeriac mold on toast, Scottish langoustine with cured egg yolks and spruce, and salt aged duck hung over burning grape vines.

But Simon says his favourite food is the humble burger, and that he eats one a week.

He's worked with his most senior chefs to create what he promises is the 'best burger we've ever had'.

The sandwiches are made with Lake District Belted Galloway patties, made using shin, brisket and rump cap cuts.

The beef is then topped with American-style cheese, made with St Andrews cheddar and beer from local craft brewery Cloudwater.

Then there's a potato and brown butter bun, a koji and dill mayonnaise, iceberg lettuce and green onion paste.

Each element of the £16 burger is made on the day of serving, with a limit of 100 burgers per day.

Mana will also be selling soft drinks priced at £5 each.

Flavours will be a lime, raw sugar, mint, and cucumber soda, a sorrel and matcha iced tea, and a fermented banks tomato and oregano soda.

Simon says: "We're extremely excited to bring some sunshine to an otherwise unspectacular period in many peoples lives.

"In order to do that, we considered comfort foods that we could apply our usual ethos and knowledge to."

NHS staff will be able to claim one free burger per order on every Wednesday - just show your NHS ID on collection.

Simon and Mana's sous chef Blaise Murphy have spent time in Mexico, and hope to bring traditionally prepared tortillas to Manchester next with a menu of takeaway tacos.

Bookings can be made up to three hours in advance of collection, with pre-payment taking on ordering.

Reservations will be released at 6pm on Tuesday January 12 on Tock to Go.
