One witness, who did not wish to give his name, described seeing police descend on the supermarket car park following the incident.
He said: “I was outside Tesco and saw about 40 youths.
“I went over and there was two men and a woman fighting.
“Next, the man pulled a knife and as the other man went to hit him the blade went straight through his hand.
“About four police cars and a riot van pulled up and he fled but they caught him and put him in the back of the van.
“He then proceeded to bang on the side of the van.
“It was something you wouldn’t expect in a small town like Hindley.”
Witness Selina Heaton, 19, who witnessed a man with a knife on nearby Argyle Street earlier in the evening, added: “I just heard loads of banging on my street.
“I looked out the window and saw a man stabbing a van.

“The knife was massive.
“After that, we rang the police and they came.
“It was so scary there was nothing else I could do but ring the police.”
