A man and a woman have been charged after a dramatic 200-kilometre police pursuit between Goulburn and Parramatta, involving alleged car-jackings and threats using a shortened firearm made to a family with a young baby.

NSW Police allege Aiden Osborne, 33, and Krystal May Carr, 31, were first spotted speeding yesterday afternoon in a stolen Toyota Hilux on the Federal Highway south of Goulburn.

Police used road spikes to try and stop the vehicle — it came to a stop nearby when a tyre was damaged but it is alleged the pair then threatened a couple and their baby with a shortened firearm, stealing their Ford Territory SUV.

The pair then crashed the family's vehicle into a guard rail at a petrol station in Sutton Forest in the Southern Highlands, and police allege yet another car was stolen from a woman and two teenage girls who were also threatened with the gun.

Police spotted the car at Yanderra north of Mittagong but were forced to abandon a pursuit because of safety concerns.

It is alleged Mr Osborne and Ms Carr, both from Dubbo, collided with three cars at Narellan Road in Mount Annan at about 5.45pm, but kept driving to Parramatta where they were tracked down by a PolAir helicopter.

Police from Parramatta, the Public Order and Riot Squad and the Dog Unit arrested the pair and allegedly found a shortened firearm at the address in Irving Street.

The pair were arrested and charged with several offences including robbery while armed, threatening to injure a person, refusing to stop during a police pursuit and common assault.

They did not appear in Parramatta Bail Court this afternoon.

Mr Osborne did not apply for bail which was formally refused, while Ms Carr, who was on bail for another matter, had her bail revoked.

The case is set to return to court on May 17.
