M Victoria have launched a Korean-inspired fermented food pop-up

Fermented foods are surfacing on menus across the capital and, to pay homage to the trend, one restaurant group have launched a gut-friendly pop-up.

Following the success of an event in October, M Victoria have opened a three-month-long Taste of Korea dining experience.

Guests can tuck into a five-course Korean-inspired menu (priced at £39.50) along with a number of drinks featuring kombucha — a fermented, sweetened tea.

Kombucha cocktails on arrival include a Bucha Collins with Earl Grey lavender tea and a Negrucha with gin and vermouth.

Kimchi pancakes will kick off the menu from chef Mike Reid, followed by steak tartare with egg yolk and Korean dumplings with fermented chilli and spring onion. Marinated barbecue beef will be on offer for the main course with a white chocolate ice cream with black sesame and matcha for pudding.

The pop-up is taking place in association with Wild Fizz Kombucha who will be providing a complementary bottle for guests to take home.

The Taste of Korea event will be located in M Victoria's Raw Bar and will run until January 31.
