An Edinburgh luxury baking company are set to open their very own flagship cafe in the heart of Edinburgh.
Linton & Co, an independent speciality coffee and luxury brownie company, will be setting up home on the rooftop of Moorgarth’s Waverley Mall in Edinburgh on Saturday 1 st May.
Until now, Linton & Co - headed up by owners Alex and Lara - have been touring the country in a beautiful Vintage Citroen H Van.
Now, in their permanent location, Linton & Co will be serving coffee from Clifton Coffee’s Direct Trade E1 Project and showcasing their handcrafted brownies based on their secret family recipe (no really, they won't tell us), using only the finest of ingredients.
They pick local fruits when in season to make their own house jam which they use for their peanut butter and strawberry jam brownies and handmade salted caramel from Isle of Skye Sea Salt.
Flavours range from original chocolate, white chocolate and raspberry, triple chocolate, salted caramel, and peanut butter & strawberry jam as well as a brand-new vegan and gluten free offering.
Lara Wilson, Co-Owner of Linton & Co said “This has always been a dream for us to open our very own flagship cafe in the centre of Edinburgh and what better place than in the heart of the city, on Waverley Mall’s rooftop with Edinburgh Castle as the backdrop. We are delighted to open and share our coffee, hand crafted brownies and so much more with you all.”
Linton & Co will be housed in the previous Bross Bagels site - which before that operated as Williams & Johnson Coffee Co.
Open daily from 8am, they will also serve a range of breakfast and lunch options throughout the day including their fresh smoothies and home-made porridge, where you can choose from ‘The Belter’ - Linton & Co brownie bites with caramel sauce, ‘The Nova Scotia’ - Bacon & maple syrup and ‘Kiss from a Rose’ - Edible rose petals, almond butter, pumpkins seeds and honey.
