Lower-calorie pancake recipes that are perfect for Shrove Tuesday

We all love a treat on Pancake Tuesday but it can be hard to fit it into our daily calories for those sticking to a deficit.

If you are trying to keep to a healthy eating plan or you are on a diet, there are lower-calorie options perfect for you to still enjoy the fun of Shrove Tuesday.

Here are a few recipes of some less calorific options if that is what you are looking for this Pancake Tuesday.

From pancakes made of blueberries, bananas and oats to a more traditional recipe, pick your favourite!

Skinny Banana Blueberry Pancakes

The following recipe makes 3 pancakes for just 219 calories and only takes 15 minutes from start to finish.

Ingredients

1/2 cup old-fashioned oats

1/4 cup greek yoghurt

1 banana

2 egg whites

1/4 tsp baking powder

1 tbsp chia seeds

1 cup blueberries

Method

1. Add all ingredients, except blueberries into a blender and blend until no lumps remain. Turn stove onto medium heat and spray non-stick skillet with cooking spray. Pour pancake batter in small-medium sized portions.

2. Add a few blueberries to each pancake and allow to cook thoroughly on one side until golden brown. Pancakes should be easy to flip which will indicate that one side is cooked. Flip carefully and cook on the other side.

3. Top with desired toppings.

Easy Banana Pancakes

These three-ingredient pancakes by Taste are super easy to make and you will probably already have the ingredients in your kitchen.

Ingredients

1 small ripe banana

1 medium egg

2 tablespoons wholemeal self-raising flour

1 calorie oil spray

Method

1. Mash banana in a medium bowl until smooth. Whisk in egg, then flour until smooth. Set aside for 5 minutes.

2. Lightly spray a medium non-stick frying pan with oil and heat over medium heat. Spoon 2 tablespoons batter into pan and spread out with the back of a spoon until 1cm thick.

3. Repeat with remaining batter to make 2 more pancakes.

4. Cook for 1 to 2 minutes or until golden. Turn and cook for 1 to 2 minutes or until pancakes are golden and cooked through and serve.

Healthy Pancakes

This recipe by BBC Good Food is only 53 calories per pancake and the following ingredients makes 10 to 12.

Ingredients

50g self-raising flour

50g wholemeal or wholegrain flour

2 small eggs, separated

150ml skimmed milk

Berries and low-fat yogurt or fromage frais to serve

Method

1. Sift the flours into a bowl or wide jug and tip any bits in the sieve back into the bowl. Add the egg yolks and a splash of milk then stir to a thick paste. Add the remaining milk a little at a time so you don’t make lumps in the batter.

2. Whisk the egg whites until they stand up in stiff peaks, then fold them carefully into the batter – try not to squash out all the air.

3. Heat a non-stick pan over a medium heat and pour in enough batter to make a pancake about 10 cm across. Cook for just under a minute until bubbles begin to pop on the surface and the edges are looking a little dry. Carefully turn the pancake over. If it is a bit wet on top, it may squirt out a little batter as you do so. In that case, leave it on the other side a little longer.

4. Keep warm while you make the remaining pancakes. Serve with your favourite healthy toppings.
