Simple banana bread recipe that's easy to follow and uses no flour

If there is one trend we have all noticed during this country-wide lockdown, it is how everyone on our social media has baked banana bread at least once.

It is one of the most popular dishes of the last six weeks and it is much easier to bake than you may think.

Unfortunately, despite its name some recipes can be unhealthy and full of sugar and fat. However thanks to Instagram baker @cakeontherun a low calorie recipe has been revealed, reports SurreyLive.

The recipe uses no butter, no flour and only a small amount of sugar.

And, the even better news is that it only takes four minutes to cook and you can even use a microwave rather than the oven.

One top tip before you start - try to use bananas that are well past there prime. We're talking spotty, mushy or even bananas that have turned black. The older the banana, the naturally sweeter the bread will be and you won't need to add additional sugar.

Microwave banana bread recipe:

Ingredients

  • 175g oats
  • 2 bananas, mashed
  • 2 eggs
  • 1 tsp baking powder
  • 3 tbsp maple syrup, sweetener or any sugar

Method:

  1. Blitz oats into a flour consistency and pour into a large bowl.
  2. Add all of the other ingredients and mix until smooth.
  3. Pour into a microwave-proof container.
  4. Top with sliced banana and microwave on high for four minutes.
  5. Pour onto a plate and sprinkle on some oats and sugar (optional).
