London’s Le Cordon Bleu cookery school to offer plant-based pâtisserie course

The world’s most famous cooking school Le Cordon Bleu has launched an Online Certificate in Plant-Based Pâtisserie.

Sustainable diets and plant-based ingredients have been up and coming trends in the food industry.

Le Cordon Bleu London now offers an online course where pâtisserie meets health and sustainability.

The course is the first of its kind as it specialises entirely in plant-based pastry.

Chefs will be taught through online culinary demonstrations, classroom theory, tutorial sessions and seminars over a 10 week course.

It will focus on new ingredients as well as techniques in aeration, emulsification, thickening and setting.

Also, it will look at allergens within pâtisserie products and the theory of substitution and product knowledge.

Deputy Head of Pâtisserie Nicolas Houchet said: “The certificate is based on the fundamental techniques and classical pâtisserie tradition, only using plant-based ingredients, which are evolving rapidly in the industry.

“Following customer interest in nutrition and healthy diets, the course aims to provide a new approach to the art of pâtisserie.”

The certificate offers accessible further education, the opportunity to develop new practical skills and culinary knowledge.

The demand for short courses in plant-based food has continued to grow since Le Cordon Bleu London launched a Diploma in Plant-Based Culinary Arts in 2020.
