LEON has launched a new summer menu and everything looks delicious

LEON has launched a new menu which celebrates British summer time and "the power of plants".

The naturally fast food chain is now offering a whole lot of new vegan items, perfect for anyone that's on a plant-based diet or just trying to eat healthier this summer.

For breakfast, there's LEON's first-ever vegan Grilled Mushroom and Cheeze Muffin. Each is layered with freshly grilled mushrooms, Leon’s vegan cheeze sauce, rocket and ketchup in a toasted sourdough English muffin. What better what to start the day?

Also included on the new menu is the Chargrilled British seasonal veg, which can be topped with either Roasted Aubergine and Sumac-pickled Onions for a vegan lunch under 300 calories.

For a high-protein dish, hungry customers can go for the Paprika Chicken with Garlic Aioli - which is less than 400 calories.

There's also a new Summer Slaw which includes julienned carrots and radish, fresh peas, celeriac and cabbage in a light dressing. We think it's perfect for enjoying at picnics when the weather warms up.

Inspired by Mediterranean flavours, LEON is also selling a new Shakshuka made with two freshly poached free-range eggs in a chilli and paprika-spiked tomato sauce, topped with garlic yoghurt, sumac and fresh herbs.

Also new on the menu is a vegan Oat, Maple and Pecan cookie and Chocolate and Banana Vegan Protein Shake, containing up to 12g of plant-powered vegan protein.

As if that wasn't enough, the healthy food chain's Big Breakfast Boxes are back on the menu and are now served with an extra slice of grilled halloumi. Yum!

While the 'Little LEON' menu for kids introduces the Grilled Halloumi Fingers & Rice, which will sit alongside the Chicken & Rice Box and GFC & Baked Fries. These dishes each contain a side of fresh peas and tomatoes.

Erica Molyneaux, head of food at LEON said: “This new menu launch is a celebration of the power of plants and British seasonal produce, with some very exciting new dishes, that pack a punch when it comes to flavour.

"Now more than ever is important to continue to support British farmers and producers and offer food that tastes good, does good and is kind to the planet.”

In case you didn't know, LEON is participating in the Eat Out to Help Out scheme. This means diners can get 50% off - up to a maximum value of £10 per head - between Mondays and Wednesdays throughout August.

All LEON dine-in customers are eligible for the discount so you can try the new dishes and treats for less.

LEON's new summer menu is available in all of its restaurants across the UK now. To find your nearest LEON, use its store finder here.
