Just 4 ingredients in this recipe for Biscoff cheesecake and it looks so good

Kitchens have been rattling with activity throughout Northern Ireland's Covid-19 lockdown.

And thousands of recipes are doing the rounds on social media.

But this one, with just four ingredients, is an absolute corker.

Leanne Bailey's love of Lotus Biscoff biscuits and cheesecake have been combined to make pure magic.

The best part is of course eating it.

But the second best part is that this recipe had just four ingredients.

Here's Leanne's recipe:

  • 1 packet of Biscoff biscuits
  • 200g Biscoff spread, crunchy or smooth
  • 2 tablespoons of melted butter that has been allowed to cool a little
  • 200g cream cheese - any brand

And here's how to make sweet magic.

  • Weigh the ingredients.
  • Melt the butter and leave to one side to cool
  • Place the biscuits in a clear plastic food bag and crush with a rolling or your hands until they are fine crumbs. Hold back a couple of biscuits for decorating
  • Mix the butter and crushed biscuits in a bowl
  • Place mixture in a tub or medium baking pan, preferably lined but not essential
  • Place this in the fridge to cool and set for an hour
  • Combine the soft cheese and Biscoff spread
  • remove biscuit bade from fridge and spread the cheese and Biscoff mixture over the base
  • Return dish to the fridge and leave to set for two hours

Once you're ready to serve, decorate with spare biscuits.
