
MIZUMAKI, Fukuoka -- Oversized garlic, about five times larger than ordinary garlic, is being dried in Mizumaki, Fukuoka Prefecture. The drying process enriches flavor and makes it possible to store the garlic for a long time.
A bulb of Mizumaki's Deka-Ninniku (Jumbo garlic) is about the size of an adult's fist, has almost no smell and is characterized by its soft flaky texture.
A commerce and industry association in the town started growing the garlic in 2005, and currently 16 farmers produce it.
Farmers used to dry their products naturally, but two years ago, they began using a communal hot-air drying facility to stabilize quality. The process reduces moisture in the garlic by about 40% over about a month.
Seven tons of the garlic is expected to be shipped this year and sold at supermarkets in the prefecture, among other shops, from early July.
A producer said, "I want everyone to increase their stamina with our garlic and survive the hot summer."
