
Juchheim Co., a Kobe-based maker of Western sweets, announced Nov. 30 that it has developed an AI-controlled oven exclusively for baking baumkuchen layer cakes.
Graphic sensors in the oven analyze each of the layers. The AI program learns the optimal conditions for baking and adjusts the time.
Juchheim said the oven can produce layered cakes of the same quality as those baked by professionals with 40 years or more of experience.
The company jointly developed the oven with an emerging firm of the ANA Holdings group. Juchheim will begin using the AI oven at a store scheduled to open in Nagoya in March next year.
