Italian passion on a plate

Until Sunday, St Regis Bangkok's Jojo restaurant is showcasing Italian guest chef Nicola Russo from Michelin-starred Tosca restaurant at the Ritz-Carlton Hong Kong.

A native of Pisa, Russo graduated from the culinary institute Ipscat G Matteotti at the age of 18. He sought opportunities to hone his craft and refine his creativity at a number of Michelin starred restaurants and luxury hotels in Europe, Middle East and Asia.

In 2017, he was handpicked to take the culinary helms at the Ritz-Carlton Hong Kong's Italian fine dining restaurant Tosca. Under his stewardship, Tosca has maintained its Michelin star rating for two consecutive years, during which time Russo has also become a figurehead of Italian cuisine in Hong Kong.

During his residency in Bangkok, the young and good-looking chef will showcase his kitchen dexterity through a series of gastronomic lunch and dinner tasting menus, as well as a specially curated selection of à la carte dishes.

Guests will find from chef Russo's multi-course set menu the likes of sea cappuccino with sea urchin and prawns; Hokkaido scallops with Jerusalem artichokes and winter black truffle; Acquerello risotto with assorted wild mushrooms and tonka beans; Mediterranean seabass with celeriac, fried mussels and cacciucco sauce; smoked beef tenderloin with eggplant and anchovies; agnolotti pasta stuffed with free-range chicken and chicken liver parfait; and ricotta white chocolate with strawberries and ginger.

Meanwhile à la carte dishes available during lunch and dinner include traditional Piedmontese vitello tonnato veal; lobster linguine; and suckling pig with parsnip and apple mustard as well as some dishes from the tasting menus.

Prices are 2,100 baht per person for a four-course lunch set; and 2,950 baht per person for a six-course dinner menu. À la carte dishes cost from 590 baht per dish.
