Geetie Singh opened the Duke of Cambridge (featured in Alastair Sawday's Eat Slow Britain) in 1998. It's an organic gastro pub in London's Islington that's won much praise for its sustainable approach to food. The menu is full of hearty, rustic dishes with a strong Mediterranean influence. The food is 100% seasonal and most of the ingredients are sourced in London and the Home Counties
