Irish mum reveals how she feeds her family of five for under €35 a week

An Irish mum has been gathering followers online for her great budgeting tips to help anyone dealing with the pressure associated with the rising cost of living.

Prices have been increasing across the board from household bills to fuel costs and even groceries.

Each week, Caz ( @irishbudgetingjourney ) posts a new meal that costs less than €5 and can feed a family of five.

The expert budgeter has been posting her shopping lists online and by following them you can feed your family for under €35 a week.

Her followers have been hailing her weekly additions, with one person writing: “Thank you, you’re a lifesaver, I mind children so it can be challenging coming up with new dinners on a budget.”

Another said: “This is great, it just shows that we still can eat well on a budget.”

In her latest pocket-friendly cooking post, the mother-of-three wrote: “Remember to use your cupboard staples to add flavour!

Ingredients

  • Sausages, Potatoes (1kg chopped)
  • 1 can of mixed beans (or baked beans)
  • 1/2 pint chicken stock
  • 1tbsp Worcestershire sauce
  • 1 tbsp flour
  • 2 tbsp mustard
  • 1 tbsp tomato purée
  • 3 carrots
  • 1 onion (or shallots)
  • 1 tbsp oil

Method

  • Brown sausages, and set them aside.
  • Fry onions in oil for 5 mins till slightly brown, then chuck in carrots, potatoes and stir in the flour.
  • Add in beans, stock, Worcestershire sauce, tomato purée, and mustard.
  • Bring to the boil.
  • Add in the sausages and simmer for 40 mins, and until potatoes are soft.
  • You can also make this in the slow cooker, just brown sausages and chuck everything in!”
