Interstellar: Michelin-starred BBQ restaurant from Texas is coming to London

London is known for many things but Texas-style barbecue isn’t one of them. And so it’s welcome news to learn Interstellar BBQ, Austin’s one Michelin-star smokehouse, is coming to the Ned.

Interstellar is one of four barbecue joints in Texas to have won a Michelin star in the state’s first guide, which came out in 2024. Led by pitmaster John Bates, tables sell out in minutes and draw crowds from across America.

In Texas’ first edition, Michelin inspectors wrote of proper barbecue “done low and slow over post oak”. Highlights include brisket in a salt, pepper and garlic rub; peach tea-glazed pork belly; beer brined turkey; and various sausages, including Polish varieties stuffed with jalapenos. Bates has been praised for his sourcing of ingredients and his commitment to the slow food movement.

“This is the first time ever that I will be bringing my BBQ style, smoke and flavour to the UK,” said Bates. “It’s a great opportunity for BBQ enthusiasts to try authentic Texan BBQ right in the heart of the City of London.”

For a month, Interstellar is to partner with From the Ashes, one of London’s only reputable American-style barbecue concepts, having found a handy bit of sponsorship from Jack Daniels. From September 5, they’ll take over the Electric Diner at the Ned, the hotel and members’ club in the City.

The From the Ashes team said in a statement: “We are very excited to work alongside John and the Ned on this collaboration. We have been admirers of John's approach to BBQ and smoking for some time so are looking forward to teaming up with one of the best.”

The menu in London will feature traditional barbecue trays (£70 per person) comprising peach tea-glazed pork, pulled lamb shoulder, confit duck leg, beef short-rib, and chilli and cheese sausage. Sides include Interstellar beans, coleslaw, Texas toast and beef fat potatoes.

Drinks will be Jack Daniels-led, unsurprisingly. Expect picklebacks, boozy iced teas and cocktails such as the Texas Sun, made with JD, corn, honey and bitters.
