April 07--Iliana Regan (Elizabeth) has announced an opening date for Bunny the Micro Bakery and Wunder Pop (both at 2928 N. Broadway). Circle May 22 on your calendar, because that's when Regan says the concepts will debut.
Bunny the Micro Bakery, billed as the "tiniest bakery in town," will be open Wednesdays through Sundays and offer a very short menu of doughnuts, breads and pierogies, and perhaps a burger; Regan calls them "craveable items." At only 12 seats, Bunny will be more about carryout than dine in, but there will be seats for a fortunate few.
When Bunny calls it a day (around 3 p.m. or so), Wunder Pop will take over. Calling it a "culinary playground," Regan says Wunder Pop (think of the name as a mashup of "wunderbar," the German word for "wonderful," and pop-up, as in restaurant), Wunder Pop will be a revolving, curated pop-up space that will play host to a variety of culinary collaborators.
"If anything, you could consider it a very casual form of Next of Intro," Regan says. "It will be continually changing, but with a stable backbone of people hired as sous chefs."
The first iteration of Wunder Pop will be ramen, featuring prehaps four or five styles of that dish. "I'd hadn't made ramen before, so I was exploring just how you do make these broths," she says. "I've been a seeker in that way; already we have a noodle down that we really like, and a kombucha broth we think is fun."
The ramen will be offered on a first-come, walk-in basis; service will be Friday and Saturday nights, and perhaps a third evening. The ramen dishes, she says, will be priced in the $8-$12 range.
After that? Probably a bread class, "After bread, I want to do a modern cuisine one, but all the things that are really gimmicky, and bring in some collaborators," Regan says. "Some of (the iterations) will run two months, some one month, one maybe just one week, depending on what it is. Some will be walk-in, and some will be pre-sold."
