I work in town: Will Henderson, The Butcher's Quarter - 'the whole city should be pedestrianised'

There’s an old saying that suggests you never see a thin butcher. That's an unfair stereotype to some of the hardest grafters in the food industry.

It’s also untrue, as Will Henderson proves. The Scotsman owns The Butcher’s Quarter on Tib Street in the city centre.

By all appearance, the shop is like that of any butchers: glass cases show off the day’s produce. There’s a smell of cleaning products and meat in the air.

But there’s also something different about The Butcher’s Quarter. For one, it has a small outdoor seating area, and is playing low-fi beats in the form of Unknown Mortal Orchestra in store when the M.E.N. visits.

So, what makes the man behind TBQ tick? And what does he make of his adopted home, Manchester?

Where’s your favourite hidden gem?

Corbiere’s is one of mine.

What’s your favourite view of the city or in the city?

From my apartment, I guess. It’s in the Blackfriars Building.

Where’s best to go for your dinner in town?

I quite enjoy steak, so Hawksmoor. Pizza would be Rudy’s. For general stuff, Trof is very good. They’d be my three picks.

Where would you take someone to show them the real Manchester?

Whiskey Jar.

Open, welcoming, friendly, funny, and exciting.

City or United?

I’m not gonna answer that one!

Your favourite city pub is…?

I would have said Edinburgh Castle, but it’s between that or Port Street Beerhouse.

Who is your favourite city ‘character’?

We have an old chap called Peter who comes in every day. He’s a character. I’d say Sue, too, around here.

What’s the one thing you’d add to Manchester if you could…

I’d pedestrianise the entire city.
