
Production of salmon roe is now at its peak in Hokkaido in the autumn salmon season.
At a factory of seafood processing company Marua Abe Shoten in Kushiro, Hokkaido, about 100 employees have been busy taking eggs out of salmon bellies, soaking them in brine and lettng them rest in bamboo baskets overnight to let the flavor set in.
The company has purchased about 70 to 80 tons of the fish per day since September, when autumn salmon fishing began at full scale, and has kept up daily production of about 8 tons of salmon roe.
The boxed salmon roe is mainly sold to sushi restaurants and other Japanese restaurants across the country. Hideaki Abe, the 55-year-old president of the company, said, "I hope people will enjoy the fresh flavor of salmon roe."
Salmon roe production will last until mid-November, according to Abe.
