There's no shortage of great Irish whiskey these days, and one of the most exciting newcomers in the last couple of years is The Sexton - a triple-distilled single malt aged in Oloroso sherry casks, that hails from Northern Ireland.
It's a rich and smooth whiskey perfect for sipping neat, but which also blends well in cocktails, while the striking hexagonal black bottle - representing the Giant's Causeway - makes it a great addition to any cocktail cabinet.
This week's Cocktail of the Week uses The Sexton to create a refreshing beverage full of bold flavours, with lemon juice enhancing the complex citrus notes of the whiskey, while the hint of sugar complements the smooth honey finish of the spirit.
