Healthy pancake recipe: How to make mini oat and banana pancakes for Shrove Tuesday

It may be Pancake Day but that doesn't mean the health conscious have to give up on all of their healthy eating plans.

These delicious little pancakes are full of goodness and as they’re cooked in a non-stick pan you don’t even have to add oil.

And not only this, but the list of healthy toppings is endless.

Ingredients (serves 2)

1 egg

1 banana

¼ cup oats

¼ teaspoon baking powder

Few drops vanilla extract

Pinch salt

Method

Combine all the ingredients together in a blender until very smooth. Leave the batter to thicken for 15 minutes.

Fry small amounts of the batter in a non-stick frying pan on a medium heat until set on the top and golden on the underside then flip over and repeat.

Serve the pancakes with a drizzle of honey or maple syrup and a selection of toppings. You could try a combination of fresh fruit, yogurt, nut butters, dried fruit, nuts, seeds and cacao nibs.
