A handcuffed Canberra prisoner managed to get hold of a frying pan and attack two Alexander Maconochie Centre guards with it before spitting in one of their faces, court documents show.
The notoriously violent Cedric Roberts, 23, has been behind bars for more than five years and has already racked up a significant number of convictions for crimes committed in custody.
He was sentenced last year for stabbing one man in the mouth and pouring boiling water mixed with jam over three others in what inmates call a "jugging".
Roberts, who has since been moved to Goulburn, is now set for even more time in prison as he awaits sentencing over another seven offences that were committed in three incidents prior to his trip up the Hume Highway.
Court documents obtained by The Canberra Times show these are assault occasioning actual bodily harm and three counts each of property damage and common assault.
In one of the episodes, dating back to August 2019, Roberts' hands were cuffed in front of his body as two guards escorted him into the Alexander Maconochie Centre kitchen area.
He grabbed an electric frying pan and raised it, walking backwards as he challenged the correctional officers by saying "let's go, c----".
Roberts swung the cookware at the guards, striking both in the arm as they defended themselves.
He subsequently launched spit and blood onto the face and neck of one of the injured officers.

During an earlier disturbance, which occurred in September 2017, Roberts and another man tossed a burning bed sheet onto the prison's common room floor.
He then punched a guard in the face, splitting the officer's lip, before using the safety railing from his bunk bed to smash a glass panel in his cell.
Roberts later informed the punched guard that he had been "doing head miles", which is a prison slang reference to the so-called mental marathon of serving time.
The inmate's behaviour on that day caused just shy of $18,000 worth of damage to the jail.
The third incident over which Roberts is to be sentenced occurred in November 2018, when the prisoner smashed a computer and television, broke some glass, and forced "a modified toothbrush" through a crack in his cell window frame. This vandalism cost about $3500 to fix.
Roberts was listed for sentence on Friday afternoon, but prosecutor Bridget Atkinson told the ACT Magistrates Court an issue had arisen around the interpretation of some relevant legislation.
She asked that the matter be pushed back until after late August, when it was likely to be sorted out.
Roberts' lawyer, Darryl Perkins, told the court the 23-year-old wanted to apply for parole in relation to existing sentences next week and was keen to have the matters dealt with as soon as possible.
But Magistrate Glenn Theakston agreed with Ms Atkinson that further jail time was "inevitable", and said adjourning the sentencing would not be prejudicial to Roberts.
Mr Theakston set the case down to return to court on September 15, prompting a frustrated Roberts to complain that he had "been waiting for years to get sentenced".
