
Master chef Thierry Drapeau of France's two-Michelin-starred restaurant Thierry Drapeau Logis de Chabotterie in Saint-Sulpice-le-Verdon is to visit La Vie Creative French Cuisine restaurant at Vie Hotel Bangkok on Jan 30-Feb 1.
Famed for his distinctive "cuisine of the soil", Drapeau is inspired by a family tradition of cooking with natural produce. The Nantes native began his culinary career at the age of 21 and has since worked alongside a number of renowned chefs.
His restaurant Thierry Drapeau Logis de Chabotterie, which he opened in 2001, earned him universal recognition for its excellence and has been over the past eight years awarded two stars by the prestigious Michelin Guide.
Drapeau's authentic jus-based cuisine is celebrated for highly concentrated taste using top quality local ingredients from the soil and the sea. Dishes maintain lightness, are low in butter but high in flavour, and feature flowers and herbs as preferred ingredients rather than spices.
According to Drapeau, a dish must be crafted in the same way as a wine, "taking time to look for a balance of herbaceous and floral notes, and work on the acidity, the bitterness and the sweetness".
