We misnamed Rufus Norris, the National Theatre director, as Rufus Jones (“Creative industries fear tuition fees will kill supply of talent”, Business, last week).
In an extract from Elizabeth David’s essay An Omelette and a Glass of Wine we referred to “pre-sale lamb cutlets” being on the menu in a celebrated hotel on the Mont-St-Michel. It was pré-salé lamb, otherwise known as salt marsh lamb, a term that means the lamb has grazed in pastures close to the seaside, which are often flooded by the sea in spring (Classic Cookbook, Observer Food Monthly, last week).
