Food expert shares hack to prevent leftover chip from going soggy when reheated

Who doesn't love a good food hack? Especially when it prevents food waste.

We're all guilty of ordering too much when we splash the cash on takeaways, and while some foods can be enjoyed cold the following day, others need to be reheated. Leftover chips are a lost cause, or so we thought, prior to discovering food expert Magda Ganea's hack.

Magda, from The Real Food Cafe in Stirlingshire was awarded second place at the National Fish and Chip Awards 2018. She told Metro.co.uk : "The biggest reason chips go soggy when reheating is moisture.

"Potatoes are full of moisture that escapes when reheated, especially in a microwave or oven where the steam can’t escape."

But fear not, the chef insists it's possible to reheat chips - it just takes a little extra time and care with the process. To begin with, Magda recommends cooling the leftover chips as soon as possible, putting them in the fridge with a "loose cover" to prevent bacteria growth.

It is vital the chips are dry when you reheat them, this can be done by patting them with a kitchen towel or by using salt to draw out any excess moisture. Magda said: "Reheat in such a way that the water can escape.

"The perfect way to reheat chips is to deep fry them, but frying them in a skillet can work just as well, use a very hot pan with a little oil. Alternatively you can grill them on a high heat, but move the chips regularly so as not to burn them."

Magda says you should probably try and "eat them all in the first sitting" to avoid the need to reheat, but if you decide to warm the chips up, "start dry and cook on a high heat". Avoid the microwave at all costs.
