Food blogger Jack Monroe shares easy 11p meal as cost of living crisis hits

Food campaigner Jack Monroe has made a "delicious" meal that costs just 11 pence as she gives ideas to people who are struggling in the cost of living crisis.

Prices have been soaring with inflation and now fuel and energy prices are being hit further by the war in the Ukraine, making it difficult for some people in the UK to make ends meet.

It has become vital for families to watch their budgets and come up with different ways that they can cut costs, reported NottinghamshireLive.

With that in mind, anti-poverty campaigner Jack Monroe often details money-saving recipes for her followers to enjoy.

She posts money-saving recipes on her website cookingonabootstrap.com to help those watching their budget, as well as on her Instagram.

One of the easiest and healthiest foods she has posted is in a recipe which costs just 11 pence per portion to make and could provide an easy lunch for people.

The red lentil, carrot and onion dip is incredibly cheap to make and when served with pitta bread can make a simple and tasty lunch for next to nothing.

Jack describes the recipe as "a delicious and enjoyable way to sneak some veggies in using just a handful of simple store cupboard ingredients and basic ingredients."

The recipe is advised to serve four - but this is just a guideline as Jack says she polished off a bowl to herself when trying it out.

The dip will keep in the fridge when covered or put in a container for up to three days.

And fans have taken to social media to say how much they like the budget meal.

One fan on Instagram responded: Will it last 3 days in the fridge though? Suspect it will be eaten well before then! Looks yummy and easy to do!"

"Looks absolutely delish Jack, thank you for sharing," said another. "I have all of these things!! I never have all of the things! I know what I'm having for lunch tomorrow then," added a third.
