Flavours from all over Italy

On June 4-8, Tavola Wine & Bar at the Renaissance Bangkok Ratchaprasong hotel is to present a unique dining experience by Michelin-starred Italian chef Luigi Taglienti of Milan's Lume restaurant.

Having worked at a number of prestige restaurants and trained under several renowned chefs, the Liguria native Taglienti found his passion and cooking identity at a young age. His style is known to marry modern techniques with culinary methods of the past.

With the menu strongly dominated by the flavours from all over Italy, each of his dishes, though looking contemporary, reflects on the memories from old times.

"It's like redesigning the traits of the well-known, but always doing so with humility, austerity and simplicity; eschewing banality and privileging unknown flavours that somehow conjure up the past and bring out the best in one another," he said.

In 2009, while working at Ristorante delle Antiche Contrade, Taglienti won the coveted Young Chef of the Year award by Ristoranti d'Italia de L'Espresso, and a star by the Michelin Guide. In 2012, his culinary project Ristorante Trussardi alla Scala was granted a Michelin Star as well as the prestigious Gambero Rosso Three Forks award.

He opened his restaurant Lume inside an old factory in the Naviglio Grande area in 2016, and within a few months was awarded a Michelin star as well as ranked Best New Restaurant in Europe 2017 by Opinionated About Dining.

Chef Taglienti is also known to use lemon in his recipes, which became the hallmark of his cooking technique in bringing flavours that he considers "an alternative of tactile and taste sensations that give brio, speed force and freshness to each morsel, making diners eager for the next dish".

Through his dishes, chef Luigi makes sure that each will be full of aromas of Italian cooking where heritage meets evolution.

He calls it "an evolution that allows me today to redefine and at the same time compose my own recipes and those of others, from north to south along the road map of Italian tastes, proposing four completely different cuisines but at the same time extraordinary coherent".

Taglienti's cuisine can be enjoyed at Bangkok Tavola Wine & Bar through a three-or-five-course lunch and five-or-seven-course dinner. Featured dishes include Liguria Shrimp à la Plancia with scrambled oyster; risotto with fresh turmeric root and laurel powder; prime Piemontese beef in Italian sauce; turbot and celeriac and black truffle tiramisu.

Prices are 1,488 baht for a three-course lunch; 2,888 baht for a five-course lunch or dinner; and 3,888 baht for a seven-course dinner. Wine pairing packages by acclaimed Italian winery Alois Lageder are also available.
