Five ways to use up leftover pancakes and batter after Pancake Day

Pancake Day has arrived which means it's time to show off those flipping skills and over indulge on pancakes. Quite often during the process we get over excited and make far too much batter, then have no idea what to do with the leftovers.

Maybe you over anticipated the amount of pancakes you and your family were going to eat, or maybe you just got carried away, either way you're now left with a massive pancake stack - or batter - that would be a shame to waste.

So instead of dumping your mix or throwing away those crepes, here are five ways you can put your leftover pancakes to use.

Freeze them in ice cube trays

If you have an excess amount of batter leftover, a viral video on TikTok suggests that freezing your mix in ice cube trays is the best way to do so.

TikToker Kelly Senyei shared in her viral video that if you pour pancake mix into ice cube trays, it is the easiest way to cook pancakes in the morning.

In her video that has almost five million views, she says once the batter is poured into the tray, you can add in your toppings such as blueberries or chocolate chips.

Once frozen, you can pop them out of the tray and put them on a low heat which is perfect for busy mornings. Kelly says “low heat is key because you want them to cook low and slow.”

Wraps for lunch

The best thing about making crepes on Pancake Day is that you can have them either sweet or savoury.

If you’ve made a massive stack of crepes, try using them as wraps for lunch.

You can keep leftover pancakes in the fridge for up to two days and can reheat them using the microwave or toaster.

Once heated, add in your favourite wrap fillings whether it be a BLT crepe or a different take on the ham and cheese toastie.

Enchilada pancakes

Another way to use up crepes for a savoury meal is by using them as enchiladas for dinner time.

Italian crespelle pancakes are packed with garlic, onion, spinach, and ricotta and topped with a rich tomato sauce. They are the covered in grated cheese and popped into the oven to bake.

Pancake cereal

Pancake cereal was a viral TikTok trend that was extremely popular during lockdown when everyone was at home and coming up with fun and creative ways to make and cook things.

While this method might be a little tedious, people who have made pancake cereal defended the trend saying the hassle is well worth it.

London based TikTok user Verna went viral for trying the pancake cereal trend, racking up an incredible 11.4m views.

In her video she showed the method which is basically squirting tiny circular splashes on to a warm pan to give you little pancakes.

Once you use up all your batter, you should be left with dozens of mini pancakes.

People have elevated this method by pouring the mini pancakes in a bowl, adding oat milk, almond butter, maple syrup and strawberries and blueberries.

Yorkshire puddings

Did you know that the mix used for pancakes and yorkshire puddings are not that different?

Yorkshire puds are a staple of any roast dinner, so put your batter to use the first Sunday after Pancake Day.

For this recipe, it’s actually better to let the mix rest in a bowl for a couple of days, however make sure your batter reaches room temp before putting in a well-oiled bun tin in the oven at 230 degrees celsius for around 20 minutes.
