Fish Game: Macellaio RC founder to change direction with launch of British-led game restaurant in Canary Wharf

The restaurateur Roberto Costa, founder of the “butcher’s theatre” group Macellaio RC, will launch a fish and game-centric concept in Canary Wharf on July 10.

Fish Game — the name presumably a nod to the Netflix show Squid Game — will be a departure from Costa’s meat-laden concept, instead focusing on seasonal, sustainable British ingredients by way of a “pared-back and changing menu.”

The restaurant, though, will be far from vegetarian — an announcement said Fish Game will be focused on the country’s “best game and fish, meticulously sourced from the UK’s lands and surrounding waters.”

Ingredients will be cooked simply over ash and charcoal, with dishes including rabbit croquettes with marjoram mayonnaise and lemon zest; tigella bread with offal, lemon and parsley gravy; wild trout on toast; mussels with venison ‘nduja; and butterflied sea bream with tomatoes and olives.

Costa has brought in Matthew Colk, formerly of Roast and The Gun Pub, as executive head chef, and will also launch an aperitivo-style tequila bar on the site with Samuele Lombardi, the head bartender. The wine list will pay homage to smaller artisan producers.

Costa said: “Fish and Game represent the most important elements for us, sea, and sky, brought together by fire in our brand-new concept. The restaurant will have a romantic atmosphere, with a high focus on sustainability, where the choice of wild animals goes according to the season, and everything is sourced carefully in the UK.

“Quality has no boundaries, and as an Italian restaurateur who has always been working with Italian products since the beginning of my career, since I came to the UK, I fell in love with the land, and I want to bring to my guests table the best English products.”
