First Look at Edinburgh's epic new Buck's Bar as it gets set to open

A top fried chicken chain that has already won over Glasgow with its popular restaurants is getting ready to take over Edinburgh as it moves across the M8.

Buck's Bar, which first launched in Glasgow in 2016, will soon be launching its first restaurant in the capital (Friday, April 14) with a new venue near Lothian Road, close to the Lyceum Theatre.

Grindlay Street is now home to Edinburgh's first Buck's, with the 50-cover restaurant promising rock and roll, good times and the very best in fried chicken.

Edinburgh Live headed along for a sneak peek with owner Michael Bergson on a quiet Thursday afternoon as they get ready to launch.

Inside is a cosy 50 cover restaurant that comes with neon signage and leather seated booths (SM)

Inside the cool-looking black-fronted bar and restaurant, you'll find an American dive-bar-inspired eatery with neon signage, cool leather seated booths and a rocking soundtrack.

On the menu, you'll find American classics such as Chicken and Waffles, Nashville Hot style chicken, and of course, the ever-popular wings.

But its the star of the show, the chicken burger that they are best known for; there are 14 on offer in total – each of which comes with a whole buttermilk fried chicken breast (that's been marinated for 24 hours) served on a brioche bun with your choice of chips.

They have over 30 hot sauces on offer (SM)

There is the Buck Mac, their take on a Big Mac, the Hot Cock that comes with their Nashville hot sauce, and the classic Mothership with herb mayo and iceberg lettuce.

On the day though, we decided to try the best-selling Salt and Chilli burger (recommended by Michael) and were greeted by a huge slab of deliciously fried chicken – seriously the portions are huge – smothered in Chinese-style curry sauce and salt and chilli seasoning. It was easy to see why it's so popular.

We then got to enjoy the cracking chicken and waffles – which comes with an optional add-on of either gravy or maple syrup – which is a delicious combo in itself inspired by the Jazz singers of Harlem who would often finish in the wee hours leaving them having to choose between breakfast and dinner, so why not have both.

And don't worry if you are vegetarian or vegan they have plenty of options for you too including the tasty-sounding jackfruit burger and Buffalo Cauli Bites.

With over 30 hot sauces on offer and plenty of fiery dishes, spice heads will definitely love it here.

And when it comes to drinks they have soft shakes, hard shakes, cocktails, beers (on draught and cans), seltzers and even Glasgow's famous Panther Milk.

Overall, we were hugely impressed and with Michael confirming that they could soon be opening a second unit close to George Street, we reckon it won't be long before they are as successful here as they are back in Glasgow.
