Erik Anderson (formerly of The Catbird Seat in Nashville), the second chef-in-residence at Rich Melman's innovative Intro (2300 N. Lincoln Park West), launches his menu Thursday.
"I'm just excited to get going," Anderson said.
The chef will feature a five-course menu, plus an optional sixth course. Included will be one of the chef's signatures, a foie-gras tart with salted strawberries, hazelnut milk and radish.
Also look for a custard-filled eggshell with roasted hay and barrel-aged maple syrup, and a whiskey- and tea-flavored baba for dessert.
The menu will run through July 25, but don't expect to find the same five courses the entire time.
"My goal is to change a dish per week, so we're constantly evolving," he said. "So we're not plating the same dish for 12 weeks. Nobody wants to do that."
Intro restaurant brings in a new chef-in-residence every two or three months. Dinners are sold via non-refundable tickets, purchased online. Ticket prices vary with the day and seating time; prices for Anderson's menu range from $65-$95 (tax, beverage and 20 percent service charge additional).
