The Eco Larder Edinburgh's much-loved zero waste shop to open second store this year

The owners of a much-loved zero waste shop in Edinburgh have revealed they will be opening a second store later this year.

The husband and wife team behind The Eco Larder, which was founded in 2018, have been hard at work during lockdown, putting plans in motion to expand their waste-free vision.

Matthew and Stephanie Foulds, who run the social enterprise food store in Haymarket, opened the shop in 2018 after a successful crowdfunding campaign - and are about to do it all over again.

While the location of the new store is being kept under wraps at the moment, Stephanie told Edinburgh Live that they hope to open the new store by October this year.

The couple launched a crowdfunding campaign to fund the new store after seeing bad habits return as single-use plastic began to pop everywhere following the coronavirus outbreak.

With a new store on locals' doorsteps and The Eco Larder's cargo bike delivery service up and running, the pair hope they can make it easier than ever for people in Edinburgh to shop zero waste

Stephanie explains: "We were a worried there was a backward trend in people wanting to dispose of everything really quickly, even customers coming to our store. It was out of fear of the virus, which is understandable."

After launching the crowdfunding campaign in July, The Eco Larder have now reached their "all or nothing target" of £30,000 but hope to still raise more money which will all be invested in the new shop - you can donate here.
