Edinburgh bar launches new mouth-watering Cuban-inspired menu with brunch options

Named after Trainspotting's infamous drug dealer and with a back bar housing hundreds of bottles of Scotland's national drink, The Mother Superior on Leith Walk now also plays home to a flavour-filled Cuban menu.

In what was once Bar Brig, The Mother Superior, headed up by hospitality industry stalwart Jane Nolan, is an Edinburgh bar boasting an Americana twist.

Having previously dished up a New Orleans-themed menu with bowls of gumbo and huge Po' Boys, the latest offering from the Leith Walk watering hole is inspired by all things Cuba and made with fresh Scottish ingredients.

And from the photo below, we think you'll agree, it's a seriously mouth-watering affair.

For the meat-eaters, there's guava ribs slow cooked in a fruity sauce, mojito prawns with a prawn salsa and ropa vieja - slow cooked and shredded beef with peppers, capers and olives.

'Planta' options feature The Mother Superiors take on tamales - spicy jackfruit and corn dough steamed in a corn leaf and served with sticky pineapple chilli jam for an extra kick - as well as delicious fried slices of plantain tossed in sazon (a traditional Latin spice mix) and served with chimicurri mayo.

Sides come in the form of rice and beans (a must), fries with sazon spice and fresh salads.

For those in need of an afternoon pick-me-up (or an urgent hangover cure), The Mother Superior have also extended their Cuban food offering to the daytime with their Cuban Benedict served between 12pm and 4pm - poached eggs served on plantain, mojo hollandaise and either pulled pork or jackfruit.

The best bit? Buy it on its own for £6 or for just £4 add a Bloody Mary - consider that sore head from the night before sorted.

The Mother Superior is offering up their Cuban menu until October 17, when the menu will switch once more to another South American-inspired theme (we're already excited).
