Easy recipe for making 'perfect' scrambled eggs every time

A chef has shared how to make extra creamy scrambled eggs in three easy steps and thousands of people have praised the recipe.

Sharing the technique in a post for The New York Times, American chef J. Kenji López-Alt let people in on a secret ingredient that makes the difference, reports the Mirror.

The recipe includes two teaspoons of starch - such as potato starch, cornstarch or tapioca starch, which is said to give the eggs such a creamy texture. This is said to prevent the eggs from setting too firmly.

Along with the two teaspoons of starch, the recipe includes four tablespoons of cold unsalted butter, cut into 1/4-inch cubes, four eggs and a pinch of kosher salt.

To make the eggs, Kenji instructs you to whisk the starch with 1 and a 1/2 teaspoons of water until smooth, then add half the butter cubes, eggs and salt and whisk until the eggs are "frothy and homogenous".

Next, heat a tablespoon of water in a nonstick pan over medium-high heat, swirl gently until the water evaporates, leaving just a few small droplets. Immediately add the two remaining tablespoons of butter and swirl until mostly melted and foamy but not brown.

To finish, add the egg mixture and Kenji says "cook, pushing and folding the eggs with a spatula, until they are slightly less cooked than you’d like them, about one to two minutes, depending on doneness."

He added: "More vigorous stirring will result in finer, softer curds, while more leisurely stirring will result in larger, fluffier curds.”

Once done, serve immediately.

The recipe has gone viral on social media with thousands liking and sharing the recipe. One person said: "Thank you @kenjilopezalt for creating the perfect scrambled eggs recipe. I like mine with a little less butter but they are a game-changer. Next time I'll take a pic before I inhale them."
