East Lothian Tex-Mex food truck pop-up opens offering handmade specialities

Vegan tacos and handmade salsas are the latest reason to visit North Berwick this summer. Cactus Rose Tacos is a brand new food truck operation selling various Tex-Mex treats to sea-side visitors and residents.

The company offers handmade corn tortillas, house salsas including an avocado-free taqueria style salsa verde, and a variety of vegan tacos, including chickpea tinga.

“Consensus from our test event is that the Chickpea Tinga is a winner, but we love all our tacos equally,” the company said on Facebook.

The company officially launched food sales on Sunday after a successful “soft-launch” in June. The firm has labelled themselves as a “food pop-up” offering plant based, vegan Mexican food.

Cactus Rose Tacos was set up at SteamPunk Coffee in Central North Berwick on Sunday, and the company has said it will be operating throughout Fringe by the sea.

Although the company has branded itself primarily as a food truck, the company is likely to offer cookery classes and event catering as part of its portfolio.

North Berwick is a seaside town in East Lothian approximately 20 miles east-northeast of Edinburgh. The town boasts of Bass Rock and the Scottish Seabird Centre as well as the North Berwick Golf Club.

North Berwick can be reached by train on bus from Edinburgh City Centre in less than an hour, traffic permitting.

Cactus Rose Tacos can be found on both Instagram and Facebook where they share pop-up dates and company information.
