Diabetes Quick Fix: Veal and Olive Stew with Quick Barley

A stew in just 20 minutes? It's true! In addition to being quick, you'll love this veal stew's rich, earthy flavors. It takes a few minutes to gather the ingredients for these recipes, but then they cook on their own.

Helpful Hints:

_ Look for quick-cooking barley in the supermarket.

_ Use veal cut from the leg. It will be tender. If this isn't available, ask the butcher for a quick-cooking cut of veal.

_ Diced fresh onions can be found in the produce section of the supermarket.

_ Minced garlic can be found in jars in the produce or condiment sections of the supermarket.

Countdown:

_ Start veal.

_ While veal cooks, make barley.

Shopping List:

Here are the ingredients needed: { pound veal cut from the leg into 1-inch cubes, 1 small bottle dry white wine, 1 container black pitted olives, 1 package quick cooking pearl barley, 1 container bought diced/chopped onion, 1 can low-salt crushed tomatoes(ASTERISK), \ pound broccoli florets and 1 bunch basil (optional).

Staples: Olive oil spray, olive oil, minced garlic, salt, black peppercorns
