Shepherd's Pie is traditional pub dish. It's made with lamb cubes, some vegetables, a tomato-based sauce and topped with mashed potatoes and cheese.
Helpful Hints:
_ Use a skillet that can go from stove top to broiler.
_ Use a potato ricer or food mill to mash potatoes. If using a food processor, don't over process. The potatoes will become gluey.
_ Two tablespoons of tomato paste are used. Freeze remaining tomato paste for another use.
Countdown:
_ Preheat broiler.
_ Start potatoes boiling.
_ Make filling.
_ Finish potatoes.
_ Complete dish and broil.
Shopping List:
To buy: { pound lamb cubes cut from the leg, } pound Idaho or russet potatoes, 1 package frozen chopped onion, 1 package sliced carrots, 1 small can tomato paste, 1 bunch fresh rosemary or 1 bottle crushed rosemary, 1 small bottle low-sodium Worcestershire sauce and 1 package reduced-fat sharp cheddar cheese.
Staples: canola oil, fat free, low-sodium chicken broth, minced garlic, flour, salt and black peppercorns.
