Diabetes Quick Fix: Salsa Beef Salad

Roast beef, salsa, shredded lettuce and cheese give this salad the earthy flavors of the Southwest. Enjoy it for lunch or a light quick dinner.

Helpful Hints:

_ Washed, ready-to-eat shredded lettuce is available in the produce department.

_ Buy salsa that has no added sugar or oil.

_ Ask for lean, low-sodium roast beef in the deli section of the supermarket.

_ Prepare ingredients.

_ Assemble salad.

Shopping List:

To buy: 1 bag washed, ready-to-eat shredded lettuce, 1 orange, 1 small package shredded, reduced-fat Monterey Jack cheese, 6 ounces sliced, lean, low-sodium roast beef, 1 small jar tomato salsa, 2 seven grain dinner rolls, 1 small package frozen corn kernels and 1 small can red kidney beans.

Staples: low-fat oil and vinegar dressing.
