Diabetes Quick Fix: Greek Tuna Salad Pita Pocket With Cantaloupe

Feta cheese, olives, cucumbers and fresh greens are the base of a typical Greek salad. Add some tuna and serve in a pita pocket for a Greek-style lunch or light supper.

Helpful Hints:

_ Feta cheese is sheep's milk cheese and can be found in the dairy section of the supermarket.

_ If you don't have pita bread, serve the salad over two slices of toasted whole-wheat bread as an open sandwich.

_ You can use any type of lettuce.
