Diabetes Quick Fix: Chicken Tostadas and Cilantro Tomatoes

Crisp tortillas, smooth beans, hot flavors and cool tomatoes make this tostado recipe a great, quick meal. Tostada means toasted in English and is a flat tortilla that is toasted or deep fried. They're like little Mexican pizzas. They're usually served as an appetizer. The addition of chicken here makes this into a quick meal.

Helpful Hints:

_ Diced fresh onions and tomatoes can be found in the produce section of the supermarket.

_ Tortillas can be made in a toaster oven instead of a broiler.

_ Shredded lettuce can be found in the produce section of the supermarket.

Countdown:

_ Saute chicken.

_ Preheat broiler.

_ Prepare ingredients.

_ Make tomato salad.

_ Make tostados.

Shopping List:

To buy:10 ounces boneless, skinless chicken breast cutlets (about \-inch thick), 1 small carton reduced-fat sour cream, 1 package 6-inch corn tortillas, 1 bottle ground cumin, 1 can fat-free, refried beans(ASTERISK), 1 bag shredded lettuce, 1 container fresh diced onion, 1 container fresh diced tomatoes, 1 bunch cilantro.

Staples: olive oil, olive oil spray, salt, black peppercorns.
