Diabetes Quick Fix: Balsamic Grilled Tuna and Arugula Pasta

Tuna steaks are a treat on the grill. The flavor varies with the different species of tuna. Yellowfin tuna, also known as ahi, is delicately flavored and works well for this recipe. I use a stove-top grill to make this dinner quickly.

Arugula is mostly used in cold salads. My Italian friend Anna likes to serve her arugula cooked, using it as the base for a pasta dish.

Helpful Hints:

_ Marinate the tuna in a plastic self-seal bag for easy cleanup.

_ Any type of pasta can be used. Follow package cooking instructions.

Countdown:

_ Marinate tuna.

_ Place water for pasta on to boil.

_ Prepare other ingredients.

_ Grill tuna.

_ Make pasta dish.

Shopping List:

To buy: 2 6-ounce tuna steaks, }-inch thick (or one large steak), 1 small piece Parmesan cheese, \ pound fettuccine, 1 bag washed, ready-to-eat arugula

Staples: Olive oil, balsamic vinegar, minced garlic
