The temperatures have taken a dramatic dip overnight which always makes us crave comforting, warming food and what better than a tasty bowl of homemade soup to warm you up from the inside out.
Belfast's Undercover Chef has shared a brilliant and easy recipe on Instagram for his Curried Cauliflower soup which is a perfect hug in a bowl for those winter lunchtimes.
The ingredients list is short and there's a good chance you'll already have lots of these at home already so no need to rush to the shops.
Ingredients
2 onions
1 large cauliflower
3 cloves garlic
1 litre vegetable stock
1/2 lemon
1 tbsp olive oil
Salt and pepper
Method
- Pre heat your oven to 190 degrees
- Use a large knife to cut the cauliflower head in half through the stem, then quarters. Remove the florets from the quarters by slicing out the stem at a diagonal. Cut any large florets into small pieces.
- Add the cauliflower florets to a baking sheet. Drizzle olive oil and add salt and pepper.
- Use your hands to mix everything together on the baking tray and put into the hot oven for around 20 minutes or until golden brown.
- In a large pot add the chopped onions, garlic and drizzle of olive oil to a medium heat and soften, should take 6-8 minutes.
- Once the cauliflower is cooked add the the onions with the curry power and stir, remember to keep some cauliflower back for the garnish.
- Add boiling vegetable stock and salt and pepper and simmer for 15 minutes.
- Just before you blend the soup, add 1/2 a juice of a lemon.
- Use and hand blender or equivalent to blend the soup until smooth.

To serve, add the roasted cauliflower soup to a bowl and top a couple roasted cauliflower florets And a drizzle of olive oil.
