A CHEF who worked his way up the food chain is asking customers to set the menus aside and put their faith in him.
Modou Diagne’s second Glasgow restaurant, named Trust by Modou, is set to open in the Finnieston Strip early next month.
It will forego a set menu, instead serving up the a “dynamic” five-course offering priced at £30 per person.
Diagne said: “This is the restaurant I’ve always dreamed of. Trust is about more than just great food – it’s about connection, surprise, and giving people a reason to come back not just for a dish, but for a feeling.
“I want people to walk through the door, let go of control, and simply enjoy what we've cooked and prepared for them in that moment."
The restaurant is the chef’s second, after 111 by Modou, which was given to him by his mentor chef Nico Simeone, who he trained under in Glasgow restaurant Six By Nico.
Diagne moved to the city from Senegal and spent the first year unable to find work and experiencing homelessness.
He applied to Six by Nico as a kitchen porter minutes after the vacancy was posted, where Simeone began to teach him about being a chef and developing his skills in the kitchen.
He worked his way up from being kitchen porter to head chef.
Founded in 2015, Simeone was behind 111, but in 2020, after working together for six years, he gifted it to Diagne – who then rebranded it as 111 by Modou.
Trust’s five-course menu will focus on seasonal ingredients and flavours, aiming to make an experience that attracts repeat customers. The restaurant will be located on 1132 Argyle St, Finnieston, Glasgow.
