PLANs for a cookery school have been given the go ahead by a Scottish council.
Sheet Anchor Investments Ltd has secured permission from Glasgow City Council to convert an empty premises at Glasgow’s Princes Square shopping centre.
It comes after the Scottish Academy of Food and Drink expressed an interest in running the space within the Buchanan Street complex with “the primary use as the cookery school”.
The firm has described the project as an “exciting opportunity for the mall” which “importantly occupies a vacant unit”.
A deli counter and coffee stand, which would be open to the public, are also included, while the proposed layout shows how the school will accommodate a “chef masterclass, cocktail masterclass and whisky tasting”.
Designs also reveal a “speakeasy” area, wine tasting space and a barista masterclass. A letter, submitted on behalf of the applicant by Montagu Evans, stated: “The proposed layout plan illustrates how the unit intends to operate as a cookery school.
“This includes a chef masterclass, cocktail masterclass and whisky tasting. This will all be provided for private individuals who attend the cookery school.
“The proposed deli counter and coffee stand will be open to visiting members of the public, along with the proposed area of outdoor seating, within the Princes Square mall.”
It continued: “The proposed trading hours are to be in accordance with the opening hours of Princes Square and to allow for morning and evening trade from the bakery/deli counter/bar.
“The bakery/deli counter will be open to the public, but will primarily serve as a reception/waiting area for the classes at the cookery school.
“In the evenings, the bakery/deli counter will change to a bar style operation. Therefore, the trading hours for this element of the proposal are proposed to be the same as the mall’s opening hours, 9am–1am.”
