Work has begun on an exciting new whisky distillery site in Moray.
The distillers behind the popular Bimber Distillery in London are building the distillery and visitor site at Dunphail near Forres.
Permission for plans to convert the farm steading was given by Moray council in July this year.
Headed up by Bimber founder Dariusz Plazewski, the team expect the build to take around a year and are hoping to start distilling next year.
“We’re thrilled to be starting the construction of Dunphail Distillery,” Bimber spokesperson Matt McKay told the Spirits Business, who explained that traditional processes such as on-site floor maltings, longer fermentations, and direct-fired stills will be used at the new site.
“We fundamentally believe that the most characterful whiskies in the world are created from the finest ingredients and are crafted using authentic traditional processes.
“At Dunphail, we’ll be applying our established expertise in developing world-class whiskies and employing the traditions of the past to shape the whisky of tomorrow.”
The Dunphail distillery is expected to produce 200,000 litres of alcohol annually.
To celebrate work beginning, the Bimber team is also launching both the Dunphail Founders’ Club and an initial private cask offering.
Club members will receive a bottle of the distillery’s inaugural single malt whisky, which is expected to be released in 2026, plus four exclusive bottlings.
These include the first peated whisky produced at the distillery plus two Founder member-only Gonzalez Byass single sherry casks.
Membership will be priced at around £695 per person, with a 10% discount on online purchases, advanced notice of future releases and a welcome pack containing branded nosing glasses.
The private cask programme can also be accessed through www.dunphaildistillery.com from 12pm GMT on 10 December.
