Think Irish coffee with a central American twist. Speedy Gonzales would surely approve. Serves one.
40ml tequila
20ml sugar syrup
90ml strong coffee
50ml double cream
1 pinch cayenne pepper, to garnish
Pour the tequila, sugar syrup and coffee into a wine glass, stir to combine, then carefully float the cream on the top. Sprinkle with a little cayenne pepper and arriba, arriba! Andale andale!
