Christmas hams almost ready for the silly season

Christmas is still 74 days away but farmers and processors are already working hard to meet the demand for ham.

Six months out from December plans start being made to supply Christmas hams, meaning by October ham production is well underway.

Australian Pork Limited said this Aussie favourite was getting more popular.

"Like most Christmas purchases, the vast majority of purchases happen in the last six weeks so we haven't quite got to the prime buying period yet," said Mark Haydon, General Manager of Marketing at Australian Pork Limited

"But last year there was 15 per cent more Australian 'bone in' ham than there was the previous year."

Mr Haydon said while ham was seen as "one of the most festive meats on the market" it was trying to get consumers the meat all year around.

"Christmas ham is the best ham of the year, so why wouldn't you eat it all year around?"

The push is welcome news for the producers who have been struggling with low pork prices.

Producers hoping for higher prices

Laurie Brosnan from Bettapork piggery at Biloela in central Queensland said lots of preparation went into the Christmas ham.

"Depending on the size of your ham, the pig is aged somewhere between 17 weeks, up to 20 weeks," he said.

"Prices are still below cost of production but we are hoping that come Christmas time we might see a 10, 20, or 30 cent price increase.

While Mr Brosnan would love people to embrace more ham, he said people needed to eat other pork products too.

"Don't forget the rest of the pig. The ham is only on the back end.

"But if an Australian consumer eats a heck more pork, they're going to helping a lot of farmers and families."
