The crash between a tipper truck and another vehicle occurred shortly after 2:00pm at the highway's intersection with Camp Cable Road.
Photos shared on social media showed what appeared to be offal spread across the highway.
A Queensland Ambulance spokeswoman said a man was taken to the Beaudesert Hospital in a stable condition after the crash.
Police remained on scene to direct traffic.
Australian Traffic Network reporter Travis Groves told ABC Radio Brisbane's Steve Austin that a contractor for the Department of Main Roads was responsible for the clean-up.
Caller Mike from North Macleay told the station he drove through the intersection shortly after and spotted a worker sweeping the mess away.
"There's pools of it on the road," Mike said.
One contractor who would normally be called up for such a clean-up job, Steve from Logan Village, called in to say he was relieved it wasn't him.
"I'm so glad I didn't get the call to clean that thing up," he said.
"That's only about two kilometres from my depot.
"I'm really pleased I missed that job."
Steve said he had a fleet of road-sweeper trucks that were normally called out to similar incidents.
"We had a sewage truck tip over on the entrance to the Gateway Bridge a couple of years ago," he said.
