One chef is determined to take diners on a trip down memory lane as he launches a menu based on childhood foods – minus the party rings and spaghetti hoops.
Ben Murphy, head chef at Kensington’s Launceston Place, will take part in W London’s Dining Series from Monday November 5, offering a fine-dining menu inspired by his childhood memories.
The seven-course tasting experience will start with an "egg and soldiers" amuse-bouche, fusing foie gras and a scrambled egg mousse.
A crispy chicken skin granola will also be on offer – poured out of a mock packet of Corn Flakes and served as if it were cereal – with chicken liver parfait, which Murphy says was one of his grandad's favourite ingredients.
A beetroot with an oxtail and lemon thyme consommé will follow, in a nod to the oxtail soup Murphy would eat as a child when unwell.
"The menu has given me the opportunity to colour outside the lines and create some really bold dishes. Bringing together a selection of my childhood memories and my sense of humour while using a range of cutting-edge cooking techniques has been immense fun," Murphy said.
Elsewhere, other old favourites include an upmarket fish and chips. A highlight of the puddings is Murphy's homage to his grandmother's pear crumble, which is followed by a choc ice served with a honey and milk mouse and blackberry gel.
The heartwarming menu will be available every day from 5pm to 11pm at the Perception bar and lounge, priced at £49 per person. It will be served until the end of February 2019.
