Two-Michelin-starred Spanish chef Pere Planagumà is to present an exclusive dining experience over a six-day period at the St. Regis Bangkok.
Starting on Tuesday and running until Jan 27, Planagumà, who now runs his own Rom Restaurant in Roses, Spain, will take Bangkok guests on a Spanish culinary journey through a series of multi-course lunches and dinners that have been crafted to showcase his creative vision, emphasising even the most modest of ingredients.
Whether it be his signature Spanish omelette; shellfish fideuà with saffron and basil flowers; crispy lamb leg with black truffle; fish soup with allioli noodles; tuna tartare with sea urchin and caviar; lobster suquet with soft potatoes and eucalyptus oil; or bacalao ceviche, the complexities of the dishes are stripped off to amplify the essentials. Few elements convey authenticity and emotion in his cuisine, and that reflects his way of being in life.
Planagumà's creative, sustainable and seasonal culinary approach is deeply rooted in his homeland and the landscape surrounding him. He takes familiar products and interprets them into a modern language and presentation, where tradition meets and contrasts with the avant-garde.
His career profile includes years of training at highly-regarded establishments in Europe such as La Tour d'Argent restaurant in Paris; El Bulli under cooking wizard Ferran Adrià in Catalonia and El Celler de Can Roca in Girona, Spain. Prior to opening his own restaurant Rom in Roses, he was the head chef of Les Cols restaurant, which has been awarded two stars by the Michelin Guide.
During his residency at the St. Regis Bangkok, chef Pere Planagumà's three-course lunch, priced at 2,500 baht per person, and eight-course dinner menu, priced at 4,900 baht per person, are offered at Jojo restaurant from Tuesday to Jan 26. An all-you-can-eat Sunday brunch is featured at Viu restaurant on Jan 27 and priced at 2,850 baht per person. Optional wine pairing and beverage package are also available at extra cost.
